Pecorino Sardo is a sheep’s milk cheese from Sardinia, made using milk from the island’s indigenous Sarda sheep. This traditional production grants the cheese its protected PDO status, ensuring authenticity and quality.

Aged for 20–50 days, Pecorino Sardo delivers a bold yet balanced flavor profile, combining spicy, salty, and subtly sweet caramel notes that intensify as it matures. Its taste is often compared to a rich, nutty cheddar, offering familiarity with a distinctly Italian character.

Like Kefalograviera, Pecorino Sardo is enjoyed as a table cheese, perfect alongside dinner dishes and fresh salads.
